Torrijas (Andorran-Style French Toast)

 


Ingredients:

  • 1 loaf of day-old bread (sliced)
  • 2 cups milk
  • 1 cinnamon stick
  • Zest of 1 lemon
  • 3 eggs (beaten)
  • Olive oil for frying
  • 1/2 cup sugar
  • 1 tsp ground cinnamon

Instructions:

  1. In a saucepan, heat the milk with the cinnamon stick and lemon zest. Let it simmer for a few minutes, then remove from heat and let it cool slightly.
  2. Dip the bread slices in the infused milk, soaking them well.
  3. Dip each slice in the beaten eggs.
  4. Heat olive oil in a frying pan and fry each slice of bread until golden brown on both sides.
  5. Mix the sugar and ground cinnamon in a bowl. While the torrijas are still warm, coat them in the sugar-cinnamon mixture.
  6. Serve warm, either as a dessert or a sweet breakfast treat.
