Trinxat (Andorran Potato and Cabbage Pancake)

 


Ingredients:

  • 500g potatoes (peeled and cubed)
  • 1/2 head of cabbage (shredded)
  • 3-4 slices of bacon (diced)
  • 2 cloves garlic (minced)
  • Olive oil for frying
  • Salt and pepper to taste

Instructions:

  1. Boil the potatoes and cabbage together in salted water until both are soft (about 15-20 minutes). Drain and mash together.
  2. In a frying pan, cook the diced bacon until crispy. Add the minced garlic and cook for another minute.
  3. Add the mashed potato and cabbage mixture to the pan. Season with salt and pepper.
  4. Cook the mixture, pressing it down with a spatula to form a flat pancake. Cook for about 5-7 minutes per side, until golden and crispy.
  5. Serve hot, either as a side dish or as a main.
