This is Albania's national dish, a flavorful lamb and yogurt casserole.
Ingredients:
- 500g lamb
- 2 tablespoons butter
- 3 tablespoons rice
- 1 tablespoon flour
- 500g plain yogurt
- 2 eggs
- Salt and pepper to taste
Instructions:
- Cook the lamb: Cut lamb into pieces and brown in butter. Add a bit of water and cook on low until tender.
- Prepare the rice: Add the rice to the lamb and cook for about 10 minutes until soft.
- Yogurt sauce: In another pan, melt the butter and stir in the flour to make a roux. Add yogurt and whisk until smooth. Remove from heat, then beat in the eggs.
- Combine: Pour the yogurt sauce over the lamb and rice mixture, and bake in a preheated oven at 180°C (350°F) for 45 minutes or until golden brown.
