Tavë Kosi (Lamb and Yogurt Casserole)

 This is Albania's national dish, a flavorful lamb and yogurt casserole.



Ingredients:

  • 500g lamb
  • 2 tablespoons butter
  • 3 tablespoons rice
  • 1 tablespoon flour
  • 500g plain yogurt
  • 2 eggs
  • Salt and pepper to taste

Instructions:

  1. Cook the lamb: Cut lamb into pieces and brown in butter. Add a bit of water and cook on low until tender.
  2. Prepare the rice: Add the rice to the lamb and cook for about 10 minutes until soft.
  3. Yogurt sauce: In another pan, melt the butter and stir in the flour to make a roux. Add yogurt and whisk until smooth. Remove from heat, then beat in the eggs.
  4. Combine: Pour the yogurt sauce over the lamb and rice mixture, and bake in a preheated oven at 180°C (350°F) for 45 minutes or until golden brown.
