1. Kabuli Pulao (Qabili Palau)
One of Afghanistan’s most iconic dishes, Kabuli Pulao is a rice-based meal often made with lamb or chicken, raisins, carrots, and a blend of spices like cumin and cardamom. The dish is known for its fragrant rice, topped with sweet elements such as caramelized carrots and raisins, providing a perfect balance of savory and sweet.
Recipe:
- Ingredients: Basmati rice, lamb or chicken, onions, garlic, carrots, raisins, almonds, cumin, cardamom, cinnamon, and saffron.
- Instructions:
- Cook the rice separately and set aside.
- Fry onions, garlic, and lamb (or chicken) until browned, then simmer with water until tender.
- In a separate pan, fry carrots and raisins until caramelized.
- Mix the meat with cooked rice, layering it with the carrots and raisins. Garnish with almonds and serve.
