Mhadjeb (Algerian Stuffed Flatbread)

 


Ingredients for Dough:

  • 500g semolina flour
  • 1 tsp salt
  • Water (as needed)

Ingredients for Filling:

  • 2 onions (finely chopped)
  • 4 tomatoes (chopped)
  • 1 green bell pepper (chopped)
  • 1 red chili pepper (optional, for heat)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix the semolina and salt. Gradually add water and knead to form a soft dough. Let it rest for 30 minutes.
  2. For the filling, heat olive oil in a pan. Add the onions, bell pepper, and chili (if using). Sauté until soft.
  3. Add tomatoes, salt, and pepper. Cook until the mixture thickens, then set aside to cool.
  4. Divide the dough into small balls. Roll each ball into a thin circle.
  5. Place a spoonful of filling in the center of each circle and fold the dough over to form a square.
  6. Heat a little oil in a skillet and cook each filled flatbread until golden brown on both sides.
