Ingredients for Dough:
- 500g semolina flour
- 1 tsp salt
- Water (as needed)
Ingredients for Filling:
- 2 onions (finely chopped)
- 4 tomatoes (chopped)
- 1 green bell pepper (chopped)
- 1 red chili pepper (optional, for heat)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, mix the semolina and salt. Gradually add water and knead to form a soft dough. Let it rest for 30 minutes.
- For the filling, heat olive oil in a pan. Add the onions, bell pepper, and chili (if using). Sauté until soft.
- Add tomatoes, salt, and pepper. Cook until the mixture thickens, then set aside to cool.
- Divide the dough into small balls. Roll each ball into a thin circle.
- Place a spoonful of filling in the center of each circle and fold the dough over to form a square.
- Heat a little oil in a skillet and cook each filled flatbread until golden brown on both sides.
